Originally, field watches and pilot's watches. But I warmed also to dress watches and sports watches with nicely readable dials and arabic numerals. Preferably no subdials, no marked bezels.
Day/date functions are optional.

Aesthetic wise: the minimalist and engineer in me wanted more of a tool watch aesthetic (time, date, maybe gmt)
Movement wise: For an accuracy snob and a fellow engineer, I would say I gravitate towards novel movements or movements that pushes horological boundaries (like spring drive, remontoir d'egalite, resonance, tourbillion, etc)
Generally toolish. Legibility is key, lume is important, scratch resistance - or at least scratch tolerance (brushed finish) - is very desirable. I think we have a lot of overlap in our tastes. I need a Muhle Rescue Timer for example! I gravitate toward bracelets. I think you’re better at keeping you collection lean: if an item falls from favor, you move it along; I’m still working on that.😕 That turtle: is that a mod bezel? Looks fantastic!
I like robust watches that have good water resistance and good case materials. As I'm a physician who washes my hands 100 times a day and uses alcohol scrub 1000 times. 🤣 Not to mention being splashed by urine or blood occasionally. So my watches need to be able to handle that 🤣 Top daily beaters are Victorinox INOX Carbon Mechanical and Stowa Flieger Classic

Very much chronographs, as I generally like the look, and I actually do use the functions in my daily work. And then I just love the "snap" when activating the chrono....😀
Putting the Speedmaster Professionnal aside, my inclination is for time-only, COSC certified, sub 40 mm, round bezel steel non-dress watches, with at least 100 m of depth rating (just for peace of mind, I'm no diver by any stretch)
Recently picked-up the 39 mm Formex Essence and it proves to be a very good daily driver.
I have one thing with screw-down crowns : either the threading is Rolex smooth, or I would rather have a push-pull one.
That's one of my few gripes with the Sinn 556 : if you don't catch the thread at exactly the right spot, it quickly gets fiddly. Also why I sold my Seiko SKX009 years ago
When I first started I was all over the place. I had a few Casios and over size watches. As time moved on I like variety all kinds of movements. more into the military field watches because they small size perfect for my wrist. That hardest part keeping a respectable limited collection.

Being a forecaster, I'm partial to weather watches...
I'm also a fan of tool watches, or at least GAGA watches.
Much of my work is done in the office these days, but on occasion I get to head out into the field and do a bit of work with tools, and instruments.
Sometimes being in the "field" isn't so bad...

Strong preference for tool and dive for me - I fear I'll destroy anything that's not built for a beating!

Very much the same as you , tool watch's and simple clean design. Tough and durable can be very stylish.
I try to have variety in my collection, but a minimum 100m WR is a must for me. Otherwise I’ll try for as varied as possible.
