I definitely most of the time prefer minimal, but (and that is a big BUT), there are exception to that rule. Here is my example of a busy dial that I like very much.
Im in a "good design" camp. Minimal can be boring, busy can be cluttered, both can be stunning. It depends on the execution. Those pictures represent the worse cases.
Usually somewhere in the middle, maybe leaning towards minimal, but I do have busier watces. Too minimal and the watch can become boring to me after some time. I need some detail to keep me interested. Too busy and things just seem a little cluttered and not well thought out. I try to just enjoy watches for what they are.
I love pilot watches so busy dials for me. Then again the dial needs to make sense.

As proud owner of the Citizen Nighthawk above in the 1st photo, yes, I do love my busy dials. But In the other examples that you have shown, I think that the term that I am trying to find here is "structurally busy." Like the the AVI-8 in the middle. That huge horizontal metal strip crossing the face and then that "arc" above the 6 o' clock mark. (???) Not a fan of that sort of build but that's just me.

Generally in the middle, trending toward minimalist. But this super busy Citizens are always tempting
Mostly minimal. I have one chrono and it was a gift, I would have not bought it for myself.

That Citizen is great, I love when there is something going on, on my dial.
But then again I sometimes like it clean.

I am generally a minimalist but I do like me a nice chronograph. If someone offered me a “Speedy” I wouldn’t turn it down 😂!

Minimal is my speed. Busy makes me dizzy. All I want my watch to do is tell the time.
Your photos certainly illustrated the point. The Citizen dial had me scrambling for Tylenol to relieve the headache.
