Steakhouse? Sounds like Omega (is that Aqua Terra?) territory! Or Zenith.
Nomos general to me gives more Metro modern vibe. Oris piece is overkill in term of ruggedness. GS is a bit to dressy.
An upscale steakhouse tends to blend 2 separate elements. First, steak, especially in the States, is a rather masculine and imposing dish. Upscale, though, makes a play for more elegance. Something like an Aqua Terra: elegance but masculine and strong presence.
All words said, any of these are so fine 🥰. There is no wrong choice, I feel. Enjoy and good luck

The AT 100%. It's a not over the top but it's classy. It's shows restraint and style. Who doesn't like Omega.
