I’m a “want a date” person, though I concede aesthetically no date looks better. And for my other controversial opinion, I have no problem whatsoever with 4 (or 4:20) dates. I actually think 4:20 might sometimes be the best option, giving you symmetry of all the indices AND date.

Definitely comfortable on the wrist. Doesn’t feel top heavy or anything. I’m pretty OCD about a lot of things and the compass doesn’t bother me a ton, so unless you are exceedingly sensitive I wouldn’t worry about it.
I’m not entirely sure on the dimensions of the SM BB Pro, but I feel like if bulk was part of your problem with the Turtle, you may want to give the BB Pro a hard think before buying. I know it isn’t as thick as the OG, but San Martin definitely make some sturdy watches.
I own the SPB123 and it is a beautiful watch and would be a wonderful daily. The case is a touch thicker than you think it should be, but it’s not bulky, just a little chubby. I concur with the commenter who observed the compass moves a bunch; if that would bother you I would recommend going in either the baby Alpinist direction or one of the ’59 reissues. Don’t get in your head about the green dial or gold indices; no one cares and it is far from ostentatious.
I don’t have any Squale experience so I can’t comment there. But seems like you have great choices here - be encouraged! You can’t mess it up!
