Cool. I'd say one of the first things I typically do is look at Chrono24. I'm sure you may have done this but it allows me to plug in my parameters and get a good view of watches I'd like. So I did that for you and here are a few that I think you may enjoy.
1.) Breitling (Aerospace & Colt Oceane)
2.) Vintage Rolexes (OPs and Oyster date) can be a good find as well.
3.) Omega (seamasters, Aqua terra etc.) can be a good option as well and you can get a ton of watch for the money.
4.) Others can be Seiko, Tag, Ball, U-Boat, Oris, Squale, Christopher Ward etc. etc.
There are so many watches out there, but using Chrono24 and choosing your parameters would be my recommendation. It's easy and free.

The 29er series from Mühle Glashütte has some nice white dials.
Straum at just under $1000 so you can get a different color dial and have 2 for your budget :)

Nomos Tangente, Baume and Mercier Clifton, Frederique Constant Highlife or a few Junghans models, if that's your thing.
