I use the Chronograph function to time sth in the kitchen, laundry, time I spend grocery shopping etc. I love to interact with my watches. So the Chronograph function is my favourite by far.
Blue dials are super hard to decide. I searched for over one year to find a blue dial dive watch that matched my expectation. Blue is a tricky colour. I would suggest to go to an AD an try them on to see the colour in real life. Photos do not tell the whole story.
I personally really like the dial Lay-of the Mido. It seems that its a darker blue too.
I love the finish and the case of the Laco Original. The case of the „blaue Stunde“ never really did it for me. So I would suggest to go with the Mido. But definitely check it out in real life first!
I would say Sinn. Great and reliable watches. Form follows function is the way those beauty’s are made. So it‘s a proper tool for 007.
There is a blue version of the Sinn Finanzplatz but it might be a little bit to expensive. I think it's more towards 4k.
The Breitling Chonomat 36mm Auto might be another option if you're able to get a discount.

Hard to tell. Normally I would say wear a Casio. If the AD doesn't treat you well and thinks "he only wears a 20 $ Casio, how could he afford a Rolex/Breitling/whatsoever" It's the right time to choose a new AD.
On the other hand the Seamaster shows that your into watches, a watch enthusiast. The Speedmaster might not tick that box as good as the Seamaster. On the other hand it also depends on the AD. If the AD is cheking your wrist and he knows that you bought the Speedmaster there it could be some sign of loyalty that he wants to reward. So I voted for the Speedy.
But I wouldn't be surprised if the AD isn't looking at your wrist at all and doesn't care about what you're wearing. At the end of the day it's just usual business for the AD. I don't think you'll get a watch or don't get it because you wear a certain watch if the AD already knows you. I think being friendly an showing general interest is way more important.
The Tank is a great fit as well. Totally forgot about it.
I was thinking about the DJ with the flat bezel on a jubilee for your collection. The DJ is s a dressier watch but not a real 100 % dresswatch in my opinion. It's more like a everyday watch. You can't go wrong with the DJ for sure. But I agree with you that the Tank might be the dressier watch.
