Depends on the duration of the trip. I just went on a vacation to a beach in Mexico for four days and only took a diver. Worked great and had no worries about leaving the spare behind. I guess if you were going out of town for a while / or to a wedding or certain type of business meeting, it might change the math.
One for day (beach swimming etc) one for night (bit more dressy) as for where your going and the 'risks'. You do some research, but most of all have fun.
I am firm partisan of one and done for a trip. You don't sweat about it being lost or stolen as you keep it on your wrist anytime. You enjoy your trip at his fullest and make memory with that watch. A nice change of speed with at home where you manage your collection.
Oh and if you really want a beater because of rough areas remember a gshock never count! 😉 Get a small pouch for your precious in your jeans pocket and rock that gshock. If it get lost with your checked luggage buy another one.

But as others have said, it really depends on what you're doing. I have a family beach trip coming up this summer and we're really not going anywhere fancy while we're there, so no need to bring a dress watch. Instead I might just take one watch (an automatic diver) and a backup for it.
When I visit the folks, I take the watch roll since we sometimes go out and I like to change up what I'm wearing just for variety's sake.

Okay, so it's not lounging poolside or whatever where time is pretty irrelevant.
One should be sufficient if it's a field watch or other such thing that is hearty enough but still decent for looking nice when required. I can't fault one for going with two, a beater and something flashier. Three or more is getting self indulgent IMHO.

I went the G-Shock and Orient route. Depending on where you are going, I would keep the expensive stuff at home.

I usually take 7, I have a 6 watch roll plus one on the wrist so that really dictates the number.

How intensive is the schedule? Were it a true relaxation vacation devoid of times to be places, I'd say zero.
You’re on vacation, bring versatile watches for all occasions and some extra straps to dress it up or down.
I pack light for holidays. I'd take one. I'd take the best GADA in my collection and be done with it.

Some guys have a leather ones that have pockets that you slip your watch into, and those save space if that's a concern.
For me it depends on the transportation of the watches, I have a small watch box with 3 spaces, so I might as well always bring 3. 😄
