Hi! yeah I've put the budget (1K) on the title, and come to think of it, I'm not really into beaches or swimming (do enjoy hiking though), and I don't mind quartz or auto, really.

To be fair, there are some great Chinese watches out there. Even the most critical folks tend to love the Seagull 1963, and other brands like Sugess and Matic are garnering a lot of praise lately.
Traska Commuter Sounds like the perfect watch for you. They tend to sell out but they are releasing a new watch tomorrow so some more Commuter stock may be release soon to.

Some great suggestions on here with the Christopher Ward C63, Orion Hellcat, Hamilton khaki, and traska commuter really standing out. Can't go wrong with any of those.
I'd also add a serica 4512 to the ever-growing list.
If you can find a white dial Longines Conquest 39 that would be the best. They retail for around 1k and usually you can get a discount. I had the black dial 41 and it's an impressive watch. Don't let the butterfly clasp deter you. Quite possibly the most comfortably bracelet I have owned.
Rather than recommending one specific model, what I usually recommend to newer enthusiasts/collectors is to stick to well-known brand names. Seiko, Casio, Timex, Tissot, Longines, Hamilton, on the low-mid range, and Tag Heuer, Tudor, Breitling, Cartier, Omega, Grand Seiko, and Rolex on the higher-end.
That way, if you find that you don't really like the watch as much as you thought you would, it'll be easier to sell (or give as a gift) down the road. Once you understand what you like/don't like, it'll be easier to get into Microbrands, independents, mods, custom-builds, obscure vintage watches, and the like

I didn't go for the bracelet, but I'm told the bracelets are among the best in their class.
Haven’t seen it mentioned yet, the Baltic Aquascaphe is one of my favorites in this category.
If you're not attached to a bracelet, I would definitely recommend the Frederique Constant Classics Index. It's a very good looking watch!
