I took three on my last trip (and bought a fourth while I was there. Casio Royale, CW C63 (with extra straps) & Seiko Alpinist. Seemed like the perfect number!

I'd say fill one of those five watch rolls plus one on the wrist. That's a maximum of six watches. If you need more than that you probably shouldn't go on holiday. 😉

You only need one watch for a holiday. Pull out the GADA and be proud of how you “made due” in all situations.
I have a three watch roll, so I seem to go anywhere with three in that and one on the wrist. So my answer for you is 4.
