Well, that was rough but it reaffirmed my stance on not caring for modern Omega at all. I was going to settle for that Seamaster 1948 thing but luckily I found this. A little tacky, but it's the best I can find. Constellation Quartz 36mm.
Speedmaster. Period. It’s the best chronograph availabe in my opinion. Even my Rolex AD (they also handle Omega) agrees it’s a better watch than the Daytona. My sapphire sandwich is a joy to wear and mesmerizing to observe. Good luck… you’ve picked an amazing watch brand to explore.
I don't have any of their current line-up on my list, which is a shame because I have access to a discount (20% iirc). I recently sold my Speedy 105012, and would like a similar vintage non-bezel Seamaster for around £1k, but it's not likely to be for a couple of years.
If I had to choose it would be between these, a subtle dress watch and their modern classic:
As close to perfection as you can get. Sure the Speedmaster is iconic, like the Submariner, Lange 1 and the Calatrava, but the Aqua Terra is the one you want.

Wow. Incredible pieces there. That Malachite seamaster is sooooo groovy 🔥 But then there’s the gold and green speedy…but I don’t know…that malachite…
This is the tough thing about “one“ Omega. We’re spoiled for choice with the brand. I have a white SPM300, modern speedy and an old C case style constellation. ATs might be the best “one” Omega though…and there’s like a million references so still lots of choices
Speedmaster. You may think it’s a watch with over exposure but there is a damn good reason so many people have it and own it. Aqua Terra’s are great too and if you like divers than the 300 line is fantastic but the Speedy is fantastic
I'd say the Speedmaster with a hesalite crystal and a closed back, just the way it was since its inception. If we're talking about the current catalogue, that is.
Here's my favourite of the vintage Omegas that I own, a 1949 ref. CK 2537-4, 35mm Staybrite case, equipped with what back then was the apex of Omega's non-chronometer 30mm movements - cal. 283 with its enhanced antimagnetic hairspring.
A must have would probably be a Speedy, but I think for me, I would probably go with the Aqua Terra. Classic GADA watch and interesting dials to choose from.

It’s truly a think of stark Beauty. It’s form over function while also increasing legibility to a degree that you don’t typically see in speedmasters
The next one is the Ranchero. Purely based off as the tics, I absolutely love this watch and wish they revived the line. The lay out of the entire dial paired with my favorite handset on any watch: The broad arrow/ dauphine combo. It’s something that simply works.
Finally we have omega Seamaster 300 166.024 and related dial layouts. The sword hands simply work and this is a another example of a no frills watch that does it’s job. Inc act it did it’s job so we’ll it gave rise to most jther military design.

White gold hands and indecies. Sapphire crystal, exhibition back is also sapphire and 60 hour power reserve. Yes the lume has a different color on the minute hand.

How can you limit it to just one Omega? Speedmaster, Seamaster 300, and Aqua Terra.
Planet ocean b/c divers are my favorite kind, but if I could only have one ever, speedy.
I like vintage Genèves and De Villes. Omega quality at bargain prices (sub $500 all day long) and in classical sizes, which is what floats my boat.

New: The Railmaster pictured in the first response of this thread definitely makes Mr Happy stand up and take notice.
Vintage: There was an older Seamaster pictured in a post a week or so ago that is absolutely beautiful…or a 60s Constellation.

I’m very simple, Speedy Moon Watch. A true Grail Watch and it’s also a really great watch.
