With a Cartier tank I would get all the straps. Check out Delugs, their Cartier straps are a bit pricey but are the bees knees. If you dont want to spend too much up front, I would recommend getting a bunch of cheap straps from Amazon for a trial run. Don't discount rubber either
How about something from Rotary. They make some great quartz pieces:

Are you looking at the GMT because you just need something temporary to hold you over until you have the funds for the Longines? IMO you should consider the Seiko 5 Field GMT instead of one with a SKX case model. Plus it's got some explorer 2 vibes (the JDM model in particular)
I have so many watches I end up winding them whenever I rotate to a new watch anyway.
All that claptrap about the romance of winding the watch reinforcing a viscery connection to your watch etc.. it's, it's actually kinda true. There is something to winding the watch. I don't find it bothersome at all.
The watch winding ritual doesn't hold a candle to my coffee making ritual tho.
