I‘m a huge fan of green/brass watches like the SPB210. When done right, the two colors play off of each other and create something that’s greater than the sum of its parts.
Some of my favorites are silver dial and black strap and champagne/gold dial and brown. I am more into "old man" colours, which I think are classy and dressy.

I'm partial to black dials, with steel cases.
Silver and white, with a vivid splash of any color. Not gold or black.
I'm a sucker for a gilt dial and steel case...but silver, white, and blue is sharp, too.
I mainly LOVE black or sunny dials with golden details, as these...
But I may also like as chimmering very dark green or red dial, as this...
Which also is the only fine example of that I ever seen...
Bronze bezel with blue dial is a surprisingly great combo. Maybe due to complementary nature of the colours.
Black like the heart of an AD.
Black/grey with yellow/mustard

I love the Blue and Bronze on my Aquitaine
And of course the matte black and booger color of my Ranger.

White dial black markers indices and a pop of bright orange on the hands or something written on the dial.
A couple of close examples in my collection in the bottom 2 pics.
