I don't think that either of your watches are "minimalist" as I understand the term. They have copious text, numbered indices (two different sets of numbers with the Max Bill), date complications, and chapter rings. The Orient has Roman numerals and several fonts.
Minimalism can be like the Movado Museum Watch (no indices, just a diamond), or just indices:

Brown and gold tones match, even if the dial was neon pink, the gold I think will always stand out. That's a classy watch.

This is probably my most minimalistic watch. Simple no date Seamaster. Not much text. Nothing exiting in the dial, just a plain white surface combined with gold indicis. Less is more.
