Eventually I will acquire both, but for now I can choose just one. Realizing they’re quite different, which one do you recommend?

I'd go GS.
On the one hand the GS is more advanced, but on the other the Omega has the history and in my opinion wins out on looks. I'd suggest the Omega, but if you want that something more ground breaking GS. Go with the one you feel you can't live without for too long.
Between those particular models, I would go with the Omega first. However, I do love the GS spring drive movement and think it would be a great addition to any collection.
If you like the GS design get the snowflake model instead it looks better than the aqua terra personally.
I'd go for the aquaterra. Even though it's more expensive your planning to buy both anyway so that won't matter. To me that grand Seiko is nice but that omegas dial is just chefs kiss

If it has to be between these two, i ll take aqua terra.
Omega...I'm not sold on the spring drive. It's awesome and it's smooth, but if I were picking up a GS, it would be their high-beat GMT with the ceramic dial...just beautiful! The new Omega-AT is a solid watch as well.

Intellectually, I appreciate the GS, but they just don't "speak" to me. I've never see one and felt like I had to have it.
Tough but I think I’d go with the Aqua Terra. No reasoning behind it really, just my gut feel.
Omega first. More likely to go up in price and/or be abruptly discontinued.
And with GS, something you like even more is bound to pop up.
Agree with Omeganut. The considerations are to be made. Than of course the colour and design. I personally would buy first Omega. First a Swiss watch with great heritage. And in this case the combination of grey dial and the blue hands and markers is a clear winner for me.
It depends on what else you have in your collection and how it fits in with your rotation. But if it is your first watch, I would probably go with the Grand Seiko just because off the GMT Complication.
I think you could flip a coin and not go wrong but the Omega definitely wins from a character standpoint. I think if you are look for something classic looking go with the GS but if you want something fresh grab the Omega.
I'd go for the Omega first. Three reasons:
It's super versatile, so you can wear it pretty close to 100% of the time.
There's such a steady stream of interesting Grand Seiko releases that something you like even better might pop up in the interim.
The GS has better finishing, so you'll really appreciate it after living with the Omega for a while. You'll also appreciate the additional complication. Going in the other direction may be less satisfying.
Both good but Aqua Terra first. If only from the perspective of getting it serviced. I’ve heard negative things about GS customer service.
I'd grab one of the new AquaTerra's, with the 6-second sub dial. I got the green one in 2020 to commemorate my mum's passing. Great watch.

Although I generally would agree with you, I'm also not a GS fan myself (but some of their high-end watches DO speak to me and I think would to anyone, but I'm not talking about their <10k range), I'd suggest you go and try some of them on. It is very hard to judge watches from pics or videos. Look at the Tudor 1926 I've been discussing on the post on my profile: it is less photogenic than the BB36, but those who tried them both speak highly of it. That being said yeah, I did try and handle a lot of GS and the base models feel just "cold" to me.
