I'm also in the "one watch a year" plan, though it's self-imposed. I think my wife would prefer I bought more.
My one suggestion would be to consider a Grand Seiko, especially a spring drive. They are far more appealing in the metal than photos would suggest, and add a dimension to a collection that it otherwise wouldn't have. Worth the trip to the AD for a browse and a try-on at least.

Similar to others, I've purchased a few canvas and leather straps, and have been happy with them.
The canvas straps are genuinely great. I'll probably buy a few more of these.
The leather straps are good for the price point. You won't mistake them for high-end, but they are better than others I've tried at similar prices elsewhere.
I haven't had any problems, so I can't speak to the customer service side of things.
I have a policy with Hodinkee/Chubb for all my (and my wife's) watches over $2k each. I've never had to make a claim, so I can't really offer a recommendation.
I don't lock up or hide my watches. They are either on my dresser or on my wrist. The insurance offers some peace of mind.
