I was thinking about getting one of the antimag Omegas but the high polish on the case is just not something I can get behind. I need something that wouldn't show so many scratches. There is also an anti mag sinn but I already own a sinn so I don't know if I want to get another one. Thoughts?

Have you checked out IWC? Looks like historically they were into making anti-mag watches. I believe they still make some, but not sure which models.
Note, the following note is assuming you are not Magneto, or working with similar powers, though I love the nerdy easter egg that Charles Xavier wears a Milgauss. That little nugget almost redeemed an otherwise lousy movie. No watch would survive an MRI scan level of magnetism.
Comic-loving nerdiness aside, based on what you are saying, why not just consider a titanium watch? That leaves you a ton of options in watches given that titanium is antimagnetic.
Hate to be the one to put the obvious watch out there, but Pelagos fits the bill. Nice brushed titanium cases that hides scratches well. Sinn also has a number of cool watches that fit too. @HotWatchChick69 will rightfully say the amazing titanium cases of GS, but they are even shinier than Omega. Though, for Omenga the Seamaster 150 and the Bond Seamaster also checks the box.
Lastly, watches that use Nivachron (some Swatch group brands) or Paracrom (Rolex) should hold up well.
The Omega Seamaster Railmasters are nice. Same case design as the AT but they are mostly brushed surfaces. And super handsome watches.
The Oris caliber 400 watches have a rather high magnetic resistance. Check them out (ProPilot X, Divers 65 12H, …)
I have an Omega Railmaster, and love it. Brushed finish, high magnetic resistance, and often can be purchased at very reasonable prices.
Try a Railmaster , brushed finish and very similar case to the Auqaterra.

Shameless plug of my Citizen NB6010, but I quite like it, and apparently it has sufficient magnetic resistance that they mentioned it on the case back :)
The case may not be for everyone, and it has some areas susceptible to scratches, but it could be an interesting choice.

I don't believe there's a coating but I picked mine up used and it still looks really clean. It's using a modified eta2824-2 that measures -2 seconds on my timegrapher.
