I'm a fan of the minimalist look of a small seconds watch with a "crosshair" for the seconds display, as pictured on this Patek. I'll never spend Patek money on a watch... so are there any other examples of this style out there?

I'm also a fan. Crosshair sub-dials were pretty popular on dress watches from the 50s-70s. Three below are 9ct gold, 34mm. Cost between £100 and £300.

Heres my contribution, which is not exactly what you asked for, the small seconds. Here's one with the whole watch with that look. Laurent Ferrier - a god tier watch and almost as unaffordable as PP, but check out their Classic Origin in blue.

Literally gazillion of dress watches have this in some form, vintage even more. Don't know your budget but for small amount there are many great options from vintage Longines offering and some new ones too like Flagship Heritage model

If I’m going vintage, probably under $1k, just cause I’m nervous about fakes.
Then Longines is perfect, great vintage pieces go from 400€ onwards
Great looking watches! But this is a step too far for me. Having only a crosshair IMHO negates the entire purpose of a watch, keeping accurate time and displaying it. I do demand a certain functionality. And though I do admire small seconds with detailed markers, only 4 lines is a lack of precision. Does it matter in practical terms, prob not. But it would bother me.
Considered adding one of these for a couple years. I believe Zenith discontinued the Elite Ultra Thin in this configuration. I see a few on C24. Great suggestion
