What's the best size and why is it 36mm?

Any size that begins with a 3. I like 33mm just as much as 36mm.

My standard group are 36, 37, 39, 40, 45, and 49mm.  All of them are perfect.  ✨

Diameter is an overrated measurement.  I feel like lug to lug and/or the ratio of diameter to thickness matter more for wearability.

What is the best watch dial size? You may as well ask what the best flavor of ice cream is. The answer will always be the one you like most.

But I think it really depends mainly your own wrist-size and the style/type of the watch.

36mm suits my small wrist well as long as the lug to lug is 46mm or under. other than that, its a great size for most wrists for a dress or sports watch
