I don't think that they have better dials and finishing -- perhaps somewhat equal, with the unique feature of washi paper dials. The advantage they do have is that their quartz movements are typically perpetual calendars with jump hour setting (GS has some quartz movements with jump hour setting, but not all, and no perpetual calendars to my knowledge), two incredibly useful complications to have on extremely accurate watches. For me, the disadvantage is that they feel very much like GS homages in style. Citizen is great, but to me they have yet to release a design that feels like an iconic Citizen (still acknowledging that they have some strong and fairly unique designs, like the Bullhead chrono, the Nighthawk, etc.).

Caller GMT: depends. I'll have collaborations going with people internationally, so I'll set to their timezone. It's easy to change without hacking the watch.
Flyer GMT: home time. Since the GMT hand can only be set by hacking the watch, I want it to be where I expect it to be when I travel. If there's a rotating bezel, I can use that to track other timezones when I'm at home.
Similar background. Still very frugal in certain parts of life ("I'm not going to pay $6 for a box of crackers!") and profligate in others ("That Panerai is only $4,500!"). The first thing I'd keep in mind in your situation is that there is no rush to sell those pieces. They are icons, and you'll likely be able to sell them just as easily 3, 5, 10 years from now. You can really take the time to see how they meld (or not) into your regular life. The second thing I'd consider is that, barring unforeseen catastrophic events and as long as your career continues, you'll forget the money you spent this year in no time. Just save / invest with discipline, and if, one day something more expensive and more important than a Speedmaster comes into your life, you can sell it then.
Also, don't fear wearing your watches. They are both tough tool watches that are meant to be used in all kinds of situations. Wear them until they start to feel normal, like good friends rather than movie stars.
Millions of people are wearing mechanical watches in our magnet heavy world. It will be ok. If your watch gets magnetized, it will run very, very fast (minutes per day, not seconds). You can demagnetize it with a cheap blue box from Amazon. Don't leave your watch sitting on top of magnets, and you'll be fine.
