I just saw a different post on here and it inspired me to think about this. So our collections are ever changing as our tastes do. So there is not really a way of being done with collecting. Its against its nature. in that way your collection is pieces from younger you mixed with more recent you. It doesn’t reflect your current taste but Your taste at the point you were buying each and every one of them.
Anyways I want you To imagine the following:
you throw away your collection.
now you go watch shopping. Before that you set an amount of watches and an amount of money.
After that you have to stick with this. You can not ever buy more watches or swap any of them. It is a representation of your taste today.

2. GS SLGA007 - Dial and spring drive
3. Omega SMP 007 - James Bond... pew, pew
4. GS SLGA015 - Titanium diver
5. GS SBGV238 - Dress watch with 44GS case
6. King Seiko SPB279 - Even though Max crapped all over the watch, it reminds me of my dad, so I love it
7. Seiko SRPH55 - Come on! It looks like a turtle shell! What's not to love?
Good topic. This is not as easy (or fun) a question, as it first appears to be!
I honestly can’t tell what type/style of watch I like. I could probably tell you what I liked at this precise moment in time but I would regret it after a day or so because I didn’t mention something (regret is probably too strong a word, because it’s only a fun question!).
I can’t have a collection that’s been set in stone, for the rest of my life - I need the variety (just don’t tell Mrs. Chunghauphoto I said that 😬)

I will only mention some watches that I do not own already.
My picks would (as I can think of right now) be:
2. Bell & Ross 05 Skeleton Nightlum or a Cartier Santos
3. Tissot Le Locle
4. Brew Metric and/ or Brew Retrograph
5. Tissot PRX Chronograph
(or a Yema Rallygraf or Hamilton Intra-Matic)
Of course there are several other watches that I would like to own (such as a rosegold Rolex Day-Date) and watches that I can't think of right now.

I found this really difficult and impossible when I tried to be realistic as I really like my watches and do went complete fantasy and imagined my perfect 3 that would cost £13,750 if you paid list price.
