If you have gone through the trouble of finding a modern pocket watch from a reputable brand with the notion that you may purchase it, what more is there to say? It has classic looks, with modern internals and a warranty.
Have you considered going vintage instead? Perhaps they may not be as robust as a modern pocket watch, but there is something really cool about a time piece that is still ticking away reliably and accurately after over 100 years of use.
I had picked up this lever set Waltham model 1892 from 1903 for $130 CAD in 2019 from a local enthusiast. A full service was another $300, for a total of $430. The watch, which is almost 120 years old, keeps excellent time, and always feels special.
I have a total of 4 pocket watches in my collection, all of a similar vintage, and all of which work and keep good time. I don't really wear them, but enjoy having them.
I really like the Mondaine design aesthetic, but when paired with the unique Stop-2-Go mechanism, it takes it to another level. Having it available in a pocket watch turns that ole volume knob right up to 11. Super cool.
The Tissot Bridgeport Lepine is a great pocket watch. I own one, and I wear it when I wear a 3-piece suit. (Yes, there are still occasions in the modern day where you can do that) It draws a lot of excitement, especially when I take it out to check the time. People are fascinated by it, and I get to talk about watches a little bit. Recently, I was at an evening party wearing it, and I had showed it to someone earlier in the evening. Later that night, I was standing by her, and she says, "Hey. What time is it?" and gestured towards my pocket watch. It's little things like that which make it exciting to wear. The white dial is definitely the one to go for, in my opinion. The blued hands look gorgeous against that dial. Good luck!

Where can I get something like this, I’m in Toronto but haven’t found any old watch shops yet

I picked up this one from a member of the local watch enthusiasts group, and the other 3 from an estate sale that I discovered through that same group. I realize that doesn't really help you, but would suggest checking out local flea markets, thrift shops and/or antique shops (as opposed to watch shops). Sites like Kijiji, eBay or even Chrono24 can also be good sources, but I'd also suggest appropriate caution when dealing with random strangers when using sites like those. As a Canadian, you could also check out the Canadian Watch Collector (canwatchco.ca) site.
It should be fairly easy to find antique pocket watches in great condition without spending a lot. My total investment, for all 4 of mine, has been under $1K CAD. Service costs are probably the biggest issue, since it will likely cost at least $300 CAD to get one serviced. The only one of mine that has been serviced is the first Waltham I picked up, and that service was required because I accidentally dropped the watch - it had been working well prior to that.
As shown in the photo, these were all in really good condition when purchased - I would avoid anything that showed obvious issues, since there appear to plenty available in condition like those that I've picked up.

I'm not a fan of the case color, but I'm not you. I suspect you made the right call avoiding a hunter case. You'll need a watch chain.

Oh the color I decided on is this
If you have not yet made the purchase, I strongly encourage you to do so.
Vary cool!! I been eye balling this lil-thing for a bit, nothing special but kinda cool
Nice, but imo Tissot just wasted bluing the hands if they're going to put it on a dark dial. But you may like it so go for it.

I thought that was discontinued? Quartz takes most of the peril out of pocket watches.

Is that a Stop-2-Go model?
Rotary makes some nice ones on the more affordable end.

A good site for information related to old pocket watches is https://pocketwatchdatabase.com/
Best of luck - I'd be really interested in hearing what you end up with.
