On cheap watches I do not care as much. If I am paying $1,000+ then yes it is factor in the overall design and finishing of the watch in my opinion. I like open or exhibition casebacks since I can see the movement but if it does not fit the style of watch (like a diver), then at least put a nice design, text and/or logo on it. I am partial to Longines and Omega (before they went to open casebacks).
Unless the watch I am buying is $400 CAD or under, I always want Sapphire crystal. I am not rough with my watches, but a few of my mineral crystal watches eventually ended up with scratches while the equivalent (based on age and amount of wrist time) sapphire models look practically pristine.

Use diving bezels on my watches to time things sometimes around the house. Date is nice to have and helpful at times, but calendar and moonphase not so much.
I have several chronographs, the number of times I have seriously used it is in the single digits over the course of 15+ years. Not useful for me.
I don't have a GMT, but I do not travel, so not very useful in my case. Might still get one in the future to try it out (Longines Zulu Time is my top choice) and just complete my collection.
