I am looking for an everyday watch. I would prefer something besides a dive specific watch.
Budget is $300-$500. Microbrand is fine as well as a name brand.
39-40mm is the minimum size for my fat boy wrists.

Momentum Sea Quartz 30... a lot of Long Island Watch Company models are in that price range. Aragon has some interesting stuff, too.
I second Islander Watch. Their watches give you a ton of bang for your buck. If Seiko sold a model with similar specs (reliable movement, sapphire Crystal, decent bracelets) they would be 2x as much.
I just received the new Henry Archer Vesterhav. They are well built and look great. It is 40mm and on sale for $449.00 and I think you can still get 10% off on new order. I got mine for $405!

If you want an off the beaten path option check out this DuFrane! Although its slightly over your max budget you can use promo code Dufraneclub5 for a discount. The specs are unreal for the price.
I would check out Vario. https://vario.sg
Quality watch that has been in ocean, in the air, ditch digging, home remodeling, showers, sleeping in, dropped on the tile floor. It survived it all. Citizen Super Titanium Paradigm. It is not a diver, closer to a field watch. (https://www.citizenwatch.com/us/en/product/BM7431-51L.html?cgid=super-titanium).
