I am just about to put my Zulu up for sale. Too big and busy (I have no use for the GMT function). I LOVE the clasp and micro-adjust on the leather strap.
I think a GMT on a pilot watch makes more sense and offers more versatility than on a diver. So Zulu over Hydro in this comparison - but that is just how I view these two head to head. It's subjective.
I am leaning towards the Hydroconqest because I like the dial color and the look of the bracelet. The Zulu time has a better finishing and it is Cosc Certified, which to me doesn’t matter much.

What's your intended use?
Does the difference in water resistance matter for you? Do you prefer a GMT bezel, or a timing bezel, for how you'll use it most?
They have the same movement. But the Zulu is regulated for COSC. Is that important?
I have the Zulu, and love it. But if I was buying now, I'd probably buy the diver.
Inny minny moniney moe
The one on the left, please.
I like the Zulu time because I have too many divers already.
The dream right there

Difference in water resistance not really important for me, I love both GMT and Timing bezels. For usage I know I'd use both heavily 😂

One has a beautifully designed dial where everything contributes to a harmonious whole, the other is a Hydroconquest GMT.
Have you tried them on? I would probably base my decision on which bracelet was the best and how they fit on wrist.
Not an owner but the one on the left
I don't own either, but am a big fan of Zulu's design. Very nicely balanced.
Left. It's a bit more versatile and if it has decent water resistance I'd get it. Plus GMT screams bonus.

My preference is the Hydroconquest GMT mostly due to the new on the fly adjustment clasp
Hydroconquest
I don’t own either, but what I wouldn’t give for the one on the left…
I would choose the Zulu time over the Hydroconcquest any day.
