I am looking for any recommendations for awesome everyday watches for under $300! I would prefer something mechanical, under 40mm case diameter, and 100m of water resistance. Thanks guys!

Orient Mako 40mm. They are quite recent but can be found for 280-300 on the grey market.
If it was my money, I would look for a second hand NB1050 around that price. Not the 10ATM you're asking for but I can forego swimming with my watch if it's such a looker.
Consider the Steeldive 1954. Around USD100, keep the change for something else. Its a very solidly built watch, ceramic bezel, nh35, beautifully finished oyster bracelet and case, and looks and feels great. Very accurate too and good power reserve. Also its lume is the strongest ive seen so far
Agree on Timex Expedition North, there's the 38mm mechanical wind or my fave the Titanium at 41mm automatic. Theres also the collab with Huckberry a bit out of your $ range.
