i really like the octo finissimo line from bulgari!
If you can, try to find an M.I.H. watch, it was a collaboration between grand watchmakers like Ludwig Oechslin and Paul Gerber. It was designed by Christian Gafner and had a 30min counter on the back and an annual calendar designed by Ludwig Oechslin and then assembled in Paul Gerber's workshop. You should definitely read up on it if you find this option compelling.

You have practically eliminated all the great chronographs. So I can only recommend the ebel 1911 Chronograph with the caliber 137 (lemania based). Ebel don't them anymore. So got to source from the resale market.

I would go for IWC watches with Calibre 89 series if you like large, and Polaris Chronograph if 42 mm is okay.
Omega caliber 9300, valjoux 7750.
