Though it can be a minefield, vintage watches are a fun way to increase the variety further. I had a personal rule of only buying vintage watches priced $30 or less on Ebay at first as a way of learning about pitfalls.
But vintage does open up some fun stuff which you can't buy new affordably - mechanical chronos and solid gold watches under $250.

Doxa would be a great pick. The classic orange dial would look great in your collection

Maybe I'm biased, but ever collection needs a proper "true" GMT. Jack Mason, Mido and Bulova have good selections in the $800-$900 range.
This is a very well rounded collection. I'd add a flieger, maybe in bronze, from Stowa or Laco.

This presage dial is one of the most beautiful dial I have ever witnessed. I also like this one in white dial. Great collection 👍🏼

Love seiko. It’s a disease for sure 🤣. The gold tone seiko 5 was a gift from my mom to dad. That’s were it all probably began.
