Consolidated my collection a lot this year and this is where I'm at:

Seiko SJE093, Grand Seiko SBGV245, Seiko SKX013, Rolex Explorer II, Grand Seiko SGBN003, G-Shock 40th anniversary.

What would you add or remove?

Love the SJE. I'm a sucker for the nicer 62MAS watches. I'd add some materials (ti, ceramic, carbon etc.) or some bright colorways (salmon, kermit green, MOP, etc.) Subtract the one you wear the least, unless it has an important though limited function.
