You're not insane. I feel the same way. I actually prefer the SLGA007 but not enough to desire it.

There's something about the White Birch dial that seems too try-hard for me compared to the other textured dials GS has done. I have an SBGA415, which I love because of the subtlety of the dial texture.

You can find nice deployant clasps in different metals on eBay and Etsy as well

You could try Esslinger

The omega style clasp is great. I have one from Artem and a couple from random places. My issue with them is the setup and strap compatibility. Fitting a strap in can be difficult. 

The Tag style ones are superb. Formex makes a clasp that's similar.

I think my favorite though may be the Richard Mille style that Artem also sells. It's a butterfly type but a bit more elegantly done I think and doesn't require buttons

Citizen can't. My Nighthawk's slide rule bezel is an example.

I really like the Hirsch Runner because they're great looking leather and are water resistant.

I just bought a couple straps from Delugs as well and am really impressed by the quality, so I'd recommend them too.
