The first brand that came to mind was IWC and the second was A. Lange, but someone already mentioned those so I'll go with my third option of Urwerk. Can I afford those watches? No, but if I can only buy from one, then I might as well make it my grail.

I once waited three years for a watch repair, so I am probably patient enough for most watches, even some waitlist spanning years. 

I don't know what you consider "affordable" but Nomos Glashutte has several model families which are thin (under 7mm). On the top of my head, Tangente, Ludwig, and Tetra, but probably have more models which are thin. All of these models are around 1500 USD, IIRC.
