I think it highly depends on the model and color scheme of the specific model.
Take for example the Omega Seamaster Diver 300m. In blue it has some red accents. In green there are not color accents. I wouldn’t not chance any of them.
Definitely a hot take but whilst I like coloured dials, text or other details, I hate full coloured seconds hands. Makes it look toy like for me (no shade to those who like it subjectivity is what makes this hobby cool)
I'm not a colour guy but my favourite use of colour has to be either the blue dial on my orient golden eye, or the saphire you can see from its open heart (which ik most hate but I love )

The one have that I just love the color is my Cadisen with the blue and the red ring.
