As my collection grows to unsustainable levels where I’m not giving all my watches the wrist time they deserve, I’m wondering if I want to continue winding all my watches at night to keep them going or let them wind down. What do you think?
No need to keep them wound when they're not being worn. It's not like it's a Herculean effort to set them again when their turn comes up in the rotation.
It takes a few seconds to get a watch running again, and letting them wind down reduces the wear and tear on the movement.
If you need/want a grab-and-go watch, buy a quartz for that role. Vaer, Timex, and many others, make some great quartz offerings that look good and will run for years.
Let them be. Doesn’t really matter. Just wind the unworn ones a few times a year if you’re worried about it. Most watches sit for months without anybody touching them before they find a home.
I was in your position a few months ago when I realized my collection became quite large despite only wearing the same 3-5 pieces 80% of the time. The rest shares the remaining 20%. I have a watch winder with 3 spaces that are filled and one watch on the wrist. Means I always have 4 watches running and set at a time. All the others are resting. Not that running hurts them, but winding and checking dozens of watches each day takes up a lot of time.

What is this "reduce" thing you speak of? I'm unfamiliar with it.
