The price difference to get a FXD's "MN21" is ridiculous

I don't get the hype for MN21 over MN22 or now MN23.

Yeah sure, the supply is more limited. But as far as I know, the watches are exactly the same, and, usually, nobody cares about the serial numbers, or not to the point where the asking price would almost double.

Am I missing something? Are collectors actually eager to pay twice as much to get the first batch of a specific reference?

The Tudor Pelagos FXD. The MN21 is the Marine Nationale 21, meaning it was released in 21, the first year. In some circles folks want the 21, but that is largely the chrono24 crowd.

To the OP, it is not worth it. You do not wear the stamp and they made a TON of them. They regularly pop up for retail or less depending on where you shop for used watches.

People like to own "first edition" versions of pretty much everything. Even cars are now being released with "launch" editions.
