Anybody else have massive anxiety about taking a bracelet off a really nice watch? I know it's just spring bars, I've changed straps on other watches many times, but I can't quite bring myself to do it myself...

Not too worried about strap changes except for some bracelets.
Not as comfortable sizing bracelets though. Especially pin/collar types. They are the work of the devil.
Bracelets are harder as sometimes the endlink will not move away from the hole with the other end of the pin holding. a plastic wedge helps while you work on the other end of the pin. A few choice words help.
In my price range, I am not nervous about taking the braclet off. Out of my price range, (like an AP or Patek) frick yeah I’d be nervous!
Practice with your cheap watches. Personally if I paid 3k plus I would leave it stock. Also you get strap addiction. Every Sunday I make my self a cold coffee and start changing the straps of my watches like some therapy session.
Nobody sees the back of the lugs anyway so go for it
I think I take more care than some high-end dealers have on occasion - a stable surface, not rushing and having the right glasses on helps.
