My latest purchase is a Seamaster 300m 42mm green on green rubber. I love it!
Why? Well I own 5 modern Rolex and rotate often. I haven't found the right daily wear watch. It's not my BB 58. It's not the BB GMT.
I like all things green. The new Seamaster is my first Omega and wow! I had no idea it was so wearable on rubber and legible. The lume beats the sub IMO.
I have been contemplating an exit watch. My latest Seamaster may be it for me. So much money and time invested in watches that are not safe to wear "anywhere".
No need to stop being an enthusiast though. Just stop the hunt. It's like getting married but still watching mud wrestling. Totally acceptable, from an enthusiasts point of view.

You asked, "could you?". The answer is obviously yes. As long as you don't want the watch you bought. If you have no regard for the value of the watch or the historical reference of the design, yes.
I doubt you could talk an authorized watchmaker into to doing it.
