Some watches are more versatile than others, most of the time I wear a Max Bill, with different straps it suits most occasions for me
I'm a fan of Junghans for their versatility, it's an elegant watch, but with a different strap, in perlon for example, it becomes much more casual, the design is a timeless classic and that splash of red gives it a modern touch, if I had to choose just one I wouldn't have any doubts.
Seiko and Baltic are beautiful but more dressy and I would use them less, only on special occasions.
