Great options for sure and I think from a heritage perspective it’s hard to beat Yema, but Baltic really makes some incredible products and their designs are excellent. Between these two specific watches the Baltic takes it for me!
I’m biased. I own the Baltic. Something to consider—I really like the beads of rice bracelet. It’s quick-release, so is easy to switch it out for a strap, and the Aquascaphe is a total strap monster.
Wouldn't want either tbh, had a Yema Flygraph and it was awful!! Not well finished, wildly inaccurate, way too thick (was basically a diver with different bezel and dial) and the company weren't interested in helping sort it...
The Baltic just isn't my style and I wouldn't pay that much for an overhyped microbrand myself.

I’ve seen on some reviews that Yemas quality and customer service can be questionable.

I have owned both. I prefer the Yema. But both are lovely watches.
