Turning 40 in a couple of months, so I wanted to comemorate that with a watch.
What are my initial thoughts?

Initially thought about a Rolex Explorer II, but I don't feel comfortable wearing that where I live. I like to wear my watches and I don't want to be constantly worrying about my watch getting stolen.
Some background:
I'm a restaurant owner, so I don't wear a suit or formal attire ever, blue jeans and a black t shirts is all I wear.
Father of twin toddlers, I do need something that is durable and tough.
I am an sort of an advanced diver, so I actually dive with my watches (not all of them, mainly the doxa)
Current collection:
Doxa sub 300t pro (most worn watch)
Omega speedy sapphire sandwich (second most worn watch)
Longines Legend Diver
Seiko skx black dial
Seiko Turtle Padi
Hamilton kaki titanium
Several g shocks
What do you guys think about this?
Do you have any experience with these watches?
I live in Chile so it's not that easy to go to an AD and try watches on, they usually don't have them.
I'm planning on buying second hand, ideally in Chile or worst case scenario the US.
Would love to hear your thoughts on this, been back and forth for a few years thinking about this, so very happy to share and hear someone else's thoughts.

Seems you have many divers. I think I would go with a Pilot's watch.
A Longines Zulu is a great looking pilot's watch and has a bit of diver looks.
Also a Tudor Black Bay Heritage
Out of your choices I think the Pelagos is the best looking.
Advance happy birthday! I usually prefer Tudor over Omega but among your choices, the one that speaks to me the most is the white Omega Seamaster 300. I think it's good to add a white dial to your mostly dark dialed watches.
Have you thought about a Omega Aqua Terra? Those are very nice and versatile watches. The main negative I see is the lack of adjustment in the clasp. But otherwise great all occasion watch.
It would be a toss up between a Longines zulu time mentioned by another or the Seamaster white dial. Although, the white deal does stand out & might attract thieves 🤔
Have you considered an IWC Mark XX or a Spitfire? Not divers but would balance your collection, in my opinion. Enjoy whatever you buy!
