Agreed, specifically the ‘Bucherer Time Machine’ location but prices are really high. Although I highly recommend visiting since it’s amazing. Free drinks at the bar downstairs if you’re “shopping”. 😉
My favorite vintage / neo-vintage shops are Dannys Vintage Watches on 47th street (bought my Patek there. Google his website) and Yan's Antique Jewelry in Chinatown. Really cool pieces for good prices.

I have experience with Grand Central Watch. They’ve got a some nice pieces and a good watchmaker but I did not appreciate their front-facing customer service. The people working the desk can unfortunately be unpleasant.
Honestly in my experience NYC is best for new watches and vintage watches. There’s not a lot of neo vintage watch shops with large selections like I’ve seen in Tokyo or London.
Almost every brand has a flagship boutique that is cool to check out, in my opinion that’s more worth your time than the neo vintage stores.
Bucherer Time Machine is probably your best bet for what you’re describing but do expect to pay a premium if you want to walk out with something.
Watches of Switzerland soho is a cool store to check out with a large in store selection of new watches and a smaller pre owned section downstairs.
I’ve bought a few things from Louis Martin Jewlers. They have your standard issue Rolexs and Cartiers but will normally have some unique off-beat stuff as well. If you’re looking to get something for the misses, they also have some interesting jewelry and have always been willing to negotiate a sweet deal with me when I buy both. If you don’t care about finding something off-beat, places like that are everywhere.
Chinatown has some cool cheaper vintage stuff as well. Chen’s and Tony’s are my favorites.

I hear you. I enjoy visiting the watch boutiques when I’m in NYC—JLC, GS, Tudor, Watches of Switzerland, Vacheron, etc.

I would like a vintage Vacheron so maybe I’ll look into the vintage shops

Don’t go to grand central. Don’t think you’ll see anything you like unless you’re repairing a watch.
Go to watchfinder on 51st. I would say go to the diamond district but you really have to know your watches. Those guys are sharks.
