I'd go for either a Credor Eichi II or A. Lange & Söhne Saxonia Thin.

I second the Lange as a simple-design grail. Would add some of the H Mosers to the list too, lots of simple but beautiful dials. Gronefeld another uber-high end independent with amazing simplistic of design on some models…
