I can’t seem to get this snap back to fit a gasket.

I found a part number for a gasket, but since it is likely out of production I was trying a generic flat ring and a standard O ring, but none of them fit. So I am questioning if this yellow goldish material is supposed to stand in for the O ring? It is on there pretty well. Maybe it is gunk, but it is pretty evenly applied and hard to take off. I am not sure what to do.

You should be able to fit an assortment of gasket thicknesses and widths. As long as you are not trying to go diving with it, I'd leave the yellow stuff alone and find a fresh gasket that will fit. The yellow stuff is so even you should get a good seal. If you try to pick it out and are not successful getting it all you will have an uneven base surface that won't seal as well as if you had just left it alone.

The yellow thing is the original gasket. It's gotten hard over the years and doesn't serve it's purpose anymore. So you should clean it out and replace it. it.https://omegaforums.net/threads/yellow-back-gasket.75695/ as mentioned in this forum post as well.

Hmm I am still new to working on watches. I have not seen Seiko use this kind of material for a gasket so it seemed a bit odd to me. I was thinking perhaps it was some kind of wax or plastic maybe. I guess I will remove it then and see if my rings fit.
