At AD trying the santos but the 40 kind loo big and the 35 definitely looks small on my 7 inch wrist

Based on the 2 photos, I would say to go with the 35. It's gorgeous, and it looks great on your wrist!

Square cased watches always wear bigger than same size round watches

yep, the 35 looks perfectly fine.
35 for sure. 40mm seems too big for any Cartier, even if it is a Santos.
35 looks great on your wrist, and no one has ever regretted buying a Santos
