I had both and the 3861 is a much better caliber in all its dimensions, mainly technological. Regarding the watch itself, I never managed to connect with the Ed White, it didn't feel like a Speedmaster Professional despite being its genesis. I finally ended up selling it and buying the new sapphire moonwatch with caliber 3861, which I love. I hope my experience is useful to you, greetings.

I had a pre-moon 105012 for many years. If I were to buy another Speedy (I won't) it would be the same reference. 321 has the history, I'm not interested in the 3861.

Depends on what you’re looking for. I buy based on the (perhaps faulty) assumption that I’ll keep the watch for years/decades. Given that, I’ll take the most bulletproof watch/movement I can—so it’s the 3861 for me.
3861 is better specced. 321 is hand assembled and more prestigious. But i think i'd rather have specs over prestige ☺️
I think the 3861 shows off a little dimension
I have 3861 version but if given the free choice I would go with 321 any day despite technicaly/specs wise inferior. Main reasons are it is more beautiful, has significant historical meaning, how and where it is made/assembled and is column wheel movement. That is only for the movement, I also prefer the 321 watch as such more than modern version Speedy. But the price gap is significant, hence ( currently ) owning the 3861
