Seems like the IWC Mark 20 would be perfect. It’s 40mm diameter but it checks every other box for you. Can buy used around $3k if you look in the right spot.
I’ve been looking at that watch, but I already have a grand seiko SBGA415 and I feel like they are pretty similar, there wouldn’t really be any diversity in my collection
