Are DIY watch club any good? And should I upgrade to the pro tools set? Are the tools good quality and can I continue to use them on other watches as I am starting to get into water repair and servicing, also I wanted to upgrade the watch to sapphire double dome

The tools would be something you could use for quite a few builds. At least until you know of it's a hobby you like. Over time you'll upgrade tools when as you develop your own techniques.
@ayadai is right. With DYI watch club you get a lot of support, essentially that you will end up with a watch, no matter what.
