Been wanting to buy a Rolex GMT Master 2 but I think that the Longines Hydroconquest GMT looks super nice. Is it just me that thinks that the the bezel should be a 24h rather than the 60 min timing one?

Take a look at Jack Mason's Strat-o-timer. I own a dark night and absolutely love it; it and its different color variants (Pepsi and Espresso) is an homage of the GMT MASTER II but has its own unique identity and personality.
It depends if you want a dive watch with a gmt function or a gmt capable of diving.

I just want a GMT that looks great and with great specs

Well I've already heard of people getting the alpinist gmt for 50% rrp so if you don't want the rotating bezel and can get that deal it's great and since the nh34 and the 9075 came out there are a lot of options. I've heard great things about Maen and they do a gmt, also monta would be less than the longines for one of their gmt's.
