Not exactly what you asked re: bucket list, but three I've already really enjoyed on the value end are a Seiko 5 (not inspiring but a great beater, and versatile with straps/bracelets), a Sugess with the ST19 (what a display caseback for the money), and a Vostok Komandirskie (good general fun with a cool story imo).
