I would recommend to start practise servicing on a watch you could ruin without any regrets. You will mess up a lot of little things. Make photo's of every step and get some good magnification so you can spot the problems. I also recommend the tutorials of chronoglide on youtube before you do anything. Good luck
Hands on the Rolex can be the right ones, there are plenty of oyster precisions with those type of hand sets, but they look re-lumed. The Constellation is interesting they don't often come with a black dial. It's got the so called dog leg lugs and a pie pan dial. It's probably from around 1962 and will have a caliber 561 movement in it.
