@DixonSteele Time & Tide did publish an article mentioning the hands received Zaratsu polishing but so far it is the only source I can find specifically indicating that. Photos of the Zaratsu/Sallaz technique makes it seem like polishing very small parts like hands would be extremely difficult if not impossible.

@DixonSteele Great review of the SBGP001. I think the thickness is actually thinner though - 11.1mm according to GS. Also, can you cite your source regarding the hands being specifically Zaratsu polished? My understanding was Zaratsu polishing (aka Sallaz) was limited to cases only.
