Yep. Wanted it from its release date. Finally tried it on it 2018 and bought straight away. It is a keeper and I enjoy changing it up between the bracelet, rubber, custom leather and nylon straps.
Ask the salesman to put the JS details down in writing. Nothing to fear from JS legally if he is telling the truth.

Maybe hang on to all of them and track your wrist time for each watch over a set period then drop the one least worn. If it all comes out relatively even, add an extra watch spot to the rules 😉

I absolutely understand the self imposed restrictions/ rules. I think I appreciate my watches more now that I have cut them down to fit a core collection.
Back to your question, I would sell the Polaris as the Santos can definitely fulfill that criteria.
I wore mine to a conference at a beach resort. Bracelet in the pool and beach, leather for formal dinner (but bracelet would have been fine). Also worked just as great out casually or at the workplace.
